現地手配会社より美味しい”Bean soup á la Jókai”のレシピです（英文）
Jókai Mór was a famous Hungarian novelist of the 19th century, this rich dish was one of his favourites – and so is ours! Think about just how the flavours of those delicious vegetables mix with the delicate meat to achieve a perfect harmony of taste. We must say, however, that bean soup is a rather popular dish in Hungary anyway.
160 g mixed beans
200 g smoked pork meat
200 g sausages
2-3 carrots, 1 tomato, both chopped
3-4 teaspoons of paprika powder
salt, black pepper per taste
2 cloves garlic crushed
150 ml creme fraiche
For the pasta: 80 g plain flour, 1 egg
Rinse the beans thoroughly and soak overnight.
Cook the smoked pork meat in 1,5 l water until tender, than cut the meat into pieces and save them until serving. Fry the vegetable slices in some oil, pour with paprika powder to get a nice colour, then add the bean and the cooking liquid from the smoked pork. Add the pepper, the bay leaf and the garlic and simmer for about 30 minutes. When the beans are tender add the sausage slices, then boil for 10 minutes. Finally cook the pasta in the soup : mix the flour and the egg until you have a pretty hard dough. On a floured surface roll out to 1 cm thick and pick tiny pieces of it into the boiling soup with your fingers. Mix in the créme fraiche and re-add the pork meat before serving.
